Roasting tomatoes brings out their sweetness. They become soft and caramelized and are great for a side dish, a topping, or just a snack.

2 small tomatoes or 1 large tomato
2 tablespoons extra virgin olive oil
½ teaspoon dried basil
Fine sea salt
Preheat the oven to 425 degrees Fahrenheit.
Drizzle olive oil on a baking sheet.
Slice the tomatoes crosswise into about ¼ inch thick slices.
Spread out in a single layer on the oil lined baking pan. Drizzle with more olive oil and sprinkle with sea salt and dried basil.
Roast in the oven for about 8-10 minutes, or until soft, wrinkly, and lightly browned.
Serve on top of pizza, pasta, along side eggs, or puree for a sauce.
