Cheese of the Month – Honey Goat Gouda
This cheese is amazing. I love the depth of flavor and texture of this cheese. It reminds me a bit of a softer, sweeter Iberico, and has a subtle hint of nuttiness. I suppose since Iberico is made partly with goats milk that may be why it brings that flavor to mind. I think it would be great on a prosciutto sandwich, paired with figs, or a Nectarine and Honey Goat Gouda Sandwich with Greens. I better go make a loaf of bread so I can try these sandwiches.
