Baked Onions with Garlic

Here’s an easy side dish, with an elegant look. Serve with roast chicken or pork and braised rainbow chard.
Prep Time: 5 minutes
Cook Time: 30 minutes
Serves: 4 sides
2 tablespoons butter
4 cloves of garlic, minced
2 medium sweet onions, such as Vidalia, Walla Walla, or Maui
½ teaspoon sea salt
¼ cup water
Preheat the oven to 375 degrees Fahrenheit.
Cut the ends off the onions just to create a flat surface, cut the onions in half and remove the skins. Place the onions, cut side up in a baking pan and pour in about ¼ cup of water or enough to come ½ to 1 inch up the pan.
Peel and mince four garlic cloves. Melt two tablespoons of butter over low heat in a small skillet. Once the butter is melted add in the crushed garlic and stir, sautéing for about a minute. Do not let the garlic burn.
Spoon the garlic and butter over the center of the onions. Cover the pan with foil. Bake the onions for about 30 minutes, or until a knife easily pierces them. Sprinkle with sea salt.
Serve as hot as a side dish.
