Lamb Burger with Olivade, Roasted Red Pepper, and Red Onion

Here is a Mediterranean flavored burger, using ground lamb for the burger.  Kalamata olive spread, roasted red peppers, and red onion top it off nicely.  The star topping here is the olive spread!

Prep Time: 10 minutes (with buns and toppings prepared already)

Cook Time: 10 minutes

Serving Size: 4

Ingredients

1 recipe Soft White Sandwich Buns

1 lb. ground lamb (or beef)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon garlic powder

Fresh ground pepper and fine sea salt, to taste

Toppings

¼ – ½ red onion, thinly sliced into rounds

4 large Romaine lettuce leaves, optional

2 roasted red peppers, divided into 4 pieces

Kalamata olive spread

Process

Season the ground lamb with the, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon smoked paprika, ½ teaspoon onion powder, ½ teaspoon garlic powder, and fresh ground pepper and fine sea salt, to taste.  Mix with your hands just until combined.

Divide the ground lamb into 4 equal portions.  Shape each portion into a round and flatten.  Create a slight dip in the center so when the burger puffs it evens out and does not bulge.

Grill or saute the lamb burgers for about 4 minutes per side, or until medium.  Lamb gets a bit tough and dry when cooked well-done.

To assemble the burgers, place a burger on top of the bottom piece of bun and spread the kalamata olive spread on the inside of the topper bun.  Add 1 piece of roasted red pepper, a slice of red onion, and a piece of lettuce on top of the burger.  Top with the bun and serve!
