Muesli with Raisins

Muesli with Raisins

Muesli is a versatile, delicious, healthy, and easy breakfast or snack.  The main ingredient is uncooked rolled oats soaked in a liquid, so it’s great for the warmer months when hot cereal just sounds too hot for breakfast.  The soaked rolled oats are also mixed often mixed with nuts and fresh or dried fruits.  The soaking liquid can be anything from water, milk, juice, plain yogurt, or milk alternatives.  You can also add a sweetener if desired, but fruit will add some sweetness.  Here is a basic recipe to get you started.

Prep Time: 5 minutes + soaking overnight

Serves: 2

2/3 cup rolled oats (not instant)

1+ cup homemade almond milk (or regular milk)

1 tablespoon wheat germ

1 teaspoon ground flax

A pinch of fine sea salt

2 tablespoons dried fruit, such as cranberries or raisins

1 teaspoon honey or maple syrup, optional

Fresh berries for topping, such as blueberries, optional

Place everything, except for the fresh berries, into a dish.  Stir to combine.  Refrigerate overnight.

To serve sprinkle the fresh berries over each serving.  Serve cold or bring to room temperature for 30 minutes or so.
