Fresh Herbs to Dried

When you buy fresh herbs and they just begin to wilt or turn brown you don’t need to toss them.  Hang them upside down for a few days in a cool area to dry (but not in the refrigerator).  They will keep for quite a while in a paper bag.  To use them just crunch them up in your hand over the dish you are cooking and dried bits of herbs will fall into your dish.

When storing fresh herbs, most can be stored like other lettuces, wrapped in a paper towel and placed in a zip top bag.  They will keep for almost a week this way, depending on the herb.  Basil is one herb that does not handle the refrigerator well.  I found it is best to wash basil just before using, and just keep it loosely wrapped on the counter for storing.  Basil is one herb that just does not last long once cut.
