Behind the Doors – The Pantry Part II
Here’s a list of dry and canned pantry ingredients I keep on hand and their uses. This is just to give you an idea. For some items I list many kinds. I usually have a couple different types, but not everything under the sun. To get more ideas look in some of your favorite cookbooks. Many cookbooks have pantry ingredients listed.

One Eyed Jack (with broken yolk)
One Eyed Jacks
I love this simple dish for breakfast, lunch, dinner, or a snack. Serve it with bacon or fruit on the side. If I add cheese on top I call them Sleeping One Eyed Jacks.

Cooked Naan Brushed with Gee

Adapted from 660 Curries by Raghavan Iyer
This popular Indian flatbread is traditionally baked on the super hot walls of a clay oven called a tandoor. Here’s a recipe adapted from 660 Curries. I’ve also made a similar naan using yeast rather than the baking soda used here.

Savory Potato Salad with Bacon
This recipe was based loosely on my husband’s favorite potato salad from Lunardi’s. I say loosely, because I have only had it once or twice, and not recently. So I just gave it a shot. The key is using some of the bacon grease in the dressing mixture.
