Strawberry and Brie Sandwich with Basil

I’m not exactly sure how this sandwich came to mind, but it sounded good to me.  I especially like making it for breakfast.  It’s slightly sweet from the strawberries and white bread and savory from the Brie cheese.  Make sure to have the strawberries and Brie at room temperature for the best flavor.

Prep Time: 5 minutes

Serves: 2 Sandwiches

Ingredients

6+ strawberries, divided (3-4 thinly sliced)

4-6 slices Brie cheese (or any US double-cream or triple-cream cheese), room temperature

6 fresh basil leaves, torn

4 slices of white bread, preferably homemade

Fine sea salt, optional (just a tiny pinch)

Process

Slice the Brie cheese when you just remove it from the refrigerator, then let it come to room temperature and soften.  Otherwise, you can let it come to room temperature and then spread it on the bread.

Place a single layer of the soft Brie on top of two slices of bread.

Place a single layer of thinly sliced strawberries on top of the Brie, on each of the two slices of bread.

If you wish very lightly sprinkle the strawberries with fine sea salt.  Just a tiny pinch.

Lay the torn basil leaves on top of the sliced strawberries.

Top each bread-Brie-strawberry-basil tower with another slice of bread.

Cut in half and serve with extra strawberries on the side.
