Caramelized Onion and Garlic Pizza with Frizzled Sage

This is one of the first dishes I attempted to recreate from a restaurant dish, at one of our favorite places to eat in North Beach, Café Divine.  You slowly caramelize the onion and garlic until soft, sweet, and golden.  It’s flavorful and offers a nice change from red pizza sauce pizza.  Parmigiano-Reggiano offers a nice salty balance for the sweet onions and garlic.  The frizzled sage adds a touch of green to this white pizza.

Prep Time: 5 minutes (if dough and sauce are made)

Cook Time: About 40 minutes

Serves: 1-12” Round Pizzas

Ingredients

½ recipe Pizza Dough

2 medium to large yellow onions, thinly sliced in half rounds

About 16 cloves of garlic, peeled and intact

6-8 tablespoons extra virgin olive oil, divided

8 pieces of fresh sage

Parmigiano-Reggiano, shaved

Sea or Kosher Salt

Pizza stone, optional

Procedure

Preheat the oven to 500 degrees Fahrenheit.

Add the 4 tablespoons of olive oil to a large skillet and turn to medium heat.  Once the oil has heated, add the thinly slice onions and the 16 whole garlic cloves.  Sprinkle with salt.  Sauté on medium to low heat for 30-40 minutes until the onions, are translucent and soft and the garlic is soft and caramelized.

While the onion mixture is cooking pull out the pizza dough to about a 12-inch round.

Par bake the pizza dough, either on a pizza stone or a baking sheet for 5-7 minutes.

Now top the par-baked dough with the onion-garlic mixture, and then using a vegetable peeler, shave a few pieces of Parmigiano-Reggiano cheese onto the pizza.

Bake for another 10 minutes or so.

While the pizza is baking frizzle the sage.  Place 2-4 tablespoon of olive oil in a small skillet and heat it over medium-high heat.  Once hot and shimmering drop the sage leaves in the oil and frizzle for a few seconds on each side.  Remove with a slotted spoon or fork to a plate lined with a paper towel.  Set aside until the pizza is done cooking.

After you remove the pizza from the oven use a vegetable peeler to peel some more thin pieces of Parmigiano-Reggiano and place them on the pizza.  Sprinkle the sage over the pizza.  Allow the pizza to rest for 3-5 minutes.  Slice and serve.
