Below is a lunch and dinner meal plan for one week, for two people.  If you are cooking for more you can easily double the ingredients/recipes.   Leftovers are utilized for lunch.  The chicken leftovers cooked on Sunday are used in the taco recipe later in the week.  Links to the recipes are included.

Sunday

Dinner: Thomas Keller’s Roast Chicken with Roasted Potatoes and Broccoli Poppers (Cook 2 chickens for 4 people, with leftovers)

Monday

Lunch: Leftover Roast Chicken, Potatoes, and Broccoli Poppers; Piece of Fruit per person

Dinner:  Ginger Scallion Noodles; Piece of Fruit per person

Tuesday

Lunch: Leftover Ginger Scallion Noodles; Piece of Fruit per person

Dinner: Chicken Tacos; Piece of Fruit per person (I figure 2-3 tacos per person)

Dinner: Greens with Snow Peas and Bok Choy over Rice; Piece of Fruit per person

Thursday

Lunch: Leftover Greens with Snow Peas and Bok Choy over Rice; Piece of Fruit per person

Dinner: Creamy Tomato Soup; Toast; Piece of Fruit per person

Friday

Lunch: Leftover Creamy Tomato Soup; Toast; Piece of Fruit per person

Dinner:  Pasta with Pea Sauce; Piece of Fruit per person

Saturday

Lunch:  Leftover Pasta with Pea Sauce; Piece of Fruit per person

Dinner: Cedar Planked Salmon, Sauteed Rainbow Chard w/ Dried Cranberries, Quinoa
