Chipotle Mayonnaise

This sauce is great as a light topping to fish or shrimp tacos.  It also works well as a spread for a turkey or chicken sandwich.  Or, try it as a dip for French fries.

Prep Time: 5 minutes

Cook Time: none

Makes: ½ cup

Ingredients

½ cup mayonnaise

½ to 1 teaspoon smoked paprika, sweet or hot

½ teaspoon chipotle chili in adobo sauce, plus a bit of sauce, or to taste

Process

Chop the desired amount of chipotle chili and add it to half a cup of mayonnaise, with a bit of adobo sauce.  Stir in ½ to 1 teaspoon smoke paprika.  Stir everything to combine.

  1. Hi Erin,
    These last two, the greens and the Chipoltle sound really neat. I will give them a try.
    I just did my first whole chicken roast, then made the best soup from it from my Christmas Cookbook. It was called Chicken Noodle Soup for the Heart. Wow
    it is definitely on my permanent LIST.
