Cheese of the Month – Andante Dairy Acappella (Ashed Round)
This month I chose a local goat milk cheese from Andante Dairy called Acappella, which comes in three varieties. This particular Acappella I chose was round with an ash rind. The cheese is aged to a soft, creamy texture. It has a tang like many soft aged goat cheese, but this cheese tasted a bit more earthy than sweet. It’s great on butter crackers or lightly toasted bread. It also pairs beautifully with red grapes and soft, juicy ripe pears.
Andante produces cheeses from cow milk, goat milk, sheep milk, and cow and goat milk combinations. I’m looking forward to trying some of their other cheeses and I’m keeping my eye out for some of their seasonal cheeses like Cadenza and Figaro.
