It’s cookie time.  For a real treat splurge on some Macadamia nuts and make these White Chocolate Macadamia Nut cookies.  Homemade cookies are so much better then prepackaged, so take the extra few minutes to make your own soft, chewy cookies.

Prep Time: 10 minutes

Cook Time: 12 minutes per batch

Makes: About 48 – 56 cookies

Ingredients

1 cup (2 sticks) butter, at room temperature

1 cup granulated sugar

1 1/2 cups brown sugar

2 eggs

2 teaspoons pure vanilla extract

3 cups  flour, scooped and leveled (15 oz.)

½ teaspoon baking soda

1/2 tsp kosher or sea salt

1 – 11oz bag white chocolate chips

1 ½ cups Macadamia nuts, chopped

Process

Preheat the oven to 350 degrees Fahrenheit.

Add 3 cups (15 oz.) flour, ½ teaspoon baking soda, and 1/2 teaspoon of salt to a large bowl.  Stir with a whisk to combine and set aside.

Cream 1 cup room temperature butter with 1 cup granulated sugar and 1 1/2 cups brown sugar until light and fluffy, about 5 minutes.

Add the 2 teaspoons vanilla to the sugar/egg mixture.  Add the eggs one at a time.  Beat until thoroughly combined.

Add the flour mixture a third at a time and mix until just combined.

Stir in the white chocolate chips and the macadamia nuts.

Drop the dough by the tablespoonful onto ungreased cookie sheets.

Bake for about 12 minutes per batch, rotating the cookie sheet/s half way through cooking.
