Cheese of the Month
In order to expand the variety of cheeses I buy and use, I thought I should start trying a different cheese each month. This month I purchased one of Cowgirl Creamery’s newest cheeses, Wagon Wheel. They describe it as an everyday table cheese, perfect for snacking. It’s great in a sandwich, for topping crackers, or just slicing and eating.
Wagon Wheel is a hard cheese aged for two months. It’s not super hard like Parmigiano-Reggiano or super soft like a Brie cheese. When brought to room temperature (which you should do before eating cheese because the flavors will be more pronounced) it becomes a bit soft, but still very firm. It slices well and has a great smooth, slightly sweet flavor as well as a very mild nuttiness. Overall the cheese is fairly mild tasting, so it works well with many foods.
I will be buying this cheese again. With more complex flavors, yet still versatile, Wagon Wheel is a great alternative to the common grocery store cheeses that are mass-produced.
