Here’s another pizza to try for football watching.  It uses leftover shredded BBQ chicken and BBQ sauce so it comes together quickly.  It’s a perfect Monday Night Football recipe, especially if you made BBQ Chicken for Saturday or Sunday football watching and have leftovers in the refrigerator.  The sweet and tangy BBQ sauces pairs well with the saltiness from the cheese.  I use mozzarella and, if I have it on hand, Monterey Jack cheese.  The Monterey Jack helps add a bit more depth of flavor and holds up to the more intense flavor of the BBQ sauce.

Prep Time: 10 minutes (if dough is already made and using leftover chicken)

Cook Time: About 10 minutes

Serves: 1-12” Round Pizzas


½ recipe Pizza Dough

¾ to 1 cup leftover shredded BBQ Chicken

¼ cup extra BBQ Sauce

4-6 oz of Mozzarella cheese, freshly grated

3-4 oz of Monterey Jack cheese, freshly grated (optional)


Pizza stone or baking sheet


Preheat the oven to 500 degrees F.

Remove the BBQ sauce and BBQ chicken from the refrigerator to start bringing it up to room temperature.

Pull the pizza dough out into desired shape and thickness.

Grate the cheeses.

Par bake the pizza dough, either on a pizza stone or a baking sheet for 3-5 minutes.

Now top the par-baked dough with the ¼ cup BBQ sauce, then the ¾ cup shredded BBQ chicken, then with the grated cheeses. Bake for another 7-10 minutes or so.

Slice after 3-5 minutes of rest and serve immediately.

Variation: If you’d like to grill this pizza follow the directions for Grilled Pizza.  Since the meat is pre-cooked it’s a perfect grilling pizza.
