Oven temperatures are rarely accurate.  If you’ve ever wondered why your cookies burned even though you followed the recipe exactly, or a roast took much longer than a recipe suggested, it’s most likely your oven temperature is not what it says.  When my oven beeps to say it is preheated, it’s not.   It’s about 25 degrees from being up to temperature, sometimes more.  It usually takes my oven at least 15 more minutes to reach the correct temperature.  I know when it’s ready by the thermometer I leave hanging in the middle of the oven.

Most oven temperatures will fluctuate a bit, from opening the door or placing in a large pan of food, so don’t be alarmed if it alters a bit.  So, get an oven thermometer, place it in the middle, and check out your oven.  A thermometer will let you know when your oven is preheated, or if the temperature reading is accurate at all.
