Oven-Baked Sweet Potato Chips

Oven chips are a great alternative to fried chips, and much cleaner and easier to make at home.  Sweet potatoes give you a bright colored chip with a lot of nutrients.  Serve them with grilled hamburgers and hotdogs for a summer lunch or dinner.

Prep Time:  5-10 minutes

Cook Time:  About 30 minutes

Serves:  4 sides

Ingredients

2 medium to large sweet potatoes, scrubbed well

2 tablespoons olive oil

Salt to taste  (I love using coarse sea salt for added crunch)

Equipment

Mandoline (optional, but much easier)

Process

Preheat the oven to 425 degrees Fahrenheit.

While the oven preheats cut the sweet potatoes into paper thin rounds using a mandoline or sharp knife.

Drizzle a rimmed baking sheet with olive oil and sprinkle with coarse sea salt so when you lay the potato rounds on the sheet in a single layer the bottom sides will get seasoned.

Sprinkle the top sides with olive oil and coarse sea salt and place the baking sheet on the top rack in the oven.

Roast at 425 degrees F for 10-15 minutes, and then turn the potatoes over with tongs.  Continue roasting for another 10 minutes or so, or until done.
