Mache and Avocado Salad

This is a nice, light, delicate salad.  Mache is a soft, gentle, and almost buttery lettuce.  The avocado pairs very well.  Brighten the basic vinaigrette with some lemon zest and juice, to give the salad a fresh zing.  A sprinkling of coarse sea salt offers a bit of a crunch in this delicate salad.  Serve it as a light main entrée with some crusty bread or as a side salad to accompany a fish entrée.

Prep Time: 5-10 minutes

Serves: 2 as a main dish or 4 as a side


10oz. Mache (or 1 large handful per person)

1 avocado, peeled and cubed

1 lemon, zest and juice

¾ cup basic vinaigrette

Coarse sea salt and pepper to taste


In the bottom of a large salad bowl pour in ¾ cup of basic vinaigrette.

Add in the 10 oz. of Mache and the cubed avocado.

Sprinkle the Mache and avocado with the lemon zest, then the lemon juice from ½ the lemon (or the whole lemon if it is not very juicy).

Gently mix the salad with the dressing in the bottom of the bowl.

Sprinkle with coarse sea salt and fresh cracked pepper to taste.

Serve immediately.
