Grilled chicken quesadillas are another great way to use leftover chicken. It’s also an excellent quick, easy, summer dinner to make outside on the grill. Or, you could also make it on the stovetop if you do not have a grill. Experiment with different cheeses and salsas.

Serves: Makes 4 – 10” Quesadillas
8 – 10” Flour tortillas
1 cup of grated cheese, a combination of Monterey Jack and Cheddar
2 cups shredded leftover chicken from (Grilled Chicken or Roasted Chicken)
Tomato Salsa or Salsa of your choice for topping (and dipping)
Heat the grill to medium heat and grease the grill grates.
Have your chicken and cheese prepped and ready to go.
Lay 4 flour tortillas on the grill and grill for about 3 minutes. Flip over the tortillas and sprinkle ¼ cup of cheese on each of two of the tortillas, then sprinkle ½ cup of shredded chicken on top of each cheesy tortilla. Sprinkle another ¼ cup of cheese on top of the chicken. Top each cheesy, chicken tortilla with the plain grilled tortilla. Grill for about 3 minutes then carefully flip the filled tortillas over and grill another 3 minutes.
Repeat the process with the remaining tortillas, chicken, and cheese.
Cut each tortilla into quarters and serve with a dollop of salsa on top. Serve additional salsa on the side for dipping.
