Yogurt Parfait with Crunchy Granola

Yogurt Parfait

Here’s a fast and healthy breakfast.  I especially like making them in the summer when all the fresh fruit is available.  When it’s not peak fruit season I heat up some frozen berries, which still works very well.  If you want to take it to go either pack the granola separately, or place it on top of the yogurt, otherwise it will get soggy fast.

Prep Time: 5 minutes (with granola already made)

Serves: 1

Ingredients

1 cup plain low fat yogurt

½ fresh fruit, cut into bite sized pieces (berries are wonderful)

½ cup homemade granola

Process

Place ½ cup of the yogurt in a glass or bowl.  Top with ¼ cup of granola.  Top with ¼ cup of fruit.  Add the remaining ½ cup of yogurt, then the remaining ¼ cup of granola; last add the remaining ¼ cup fruit.
