BBQ Chicken Sandwich

Shredded BBQ chicken is a great way to use leftover chicken (especially the brined grilled chicken I posted about a couple weeks ago.  Try it in this sandwich topped with Monterey Jack cheese.

Prep Time: 5-10 minutes (using leftover cooked chicken)

Serves: 2


1 leftover grilled chicken breast (or other part of the chicken)

¼ cup homemade BBQ sauce

2 hamburger or hotdog buns

¼ cup (2 oz.) grated Monterey Jack cheese (or mozzarella)


Preheat the broiler to high heat.

Shred the cook chicken breast into small pieces.  I use two forks to pull it apart.  You can use your fingers.

Put the chicken in a bowl and add about ¼ cup of bbq sauce to the chicken, stir to combine.

Lightly toast the buns, either in the toaster or under the broiler (watch them closely).

Fill the toasted buns with the shredded bbq chicken, top with the shredded cheese and broil until the chicken heats through and the cheese melts.

Alternatively you can heat the sandwich in the microwave, but the bun will be much softer.

Serve immediately.
