Oven Roasted Sweet Potato Fries

These oven roasted sweet potato fries are a simple side dish that kids and adults alike will love.  Plus, they are so much healthier than deep-fried potatoes.  There is a tiny bit of prep work, but they can mainly be left unattended to cook.  I like to serve them with fish sticks or hamburgers.

Prep Time:  5 minutes

Cook Time:  About 40 minutes

Serves:  4 sides


2 medium to large sweet potatoes, scrubbed well

2 tablespoons olive oil

Salt to taste  (I love using coarse white sea salt for added crunch, but kosher salt is fine also)


Preheat the oven to 425 degrees Fahrenheit.

While the oven preheats cut the sweet potatoes into desired matchstick pieces equal in size.  The thinner the pieces the faster they will cook.

Spread out the cut sweet potatoes on a rimmed baking sheet leaving some room between them.  If they are too crowded they will steam and not become crisp.

Sprinkle the pieces with the 2 tablespoons of olive oil, and using your hands or a spatula toss the potatoes so the olive oil coats each piece.

Sprinkle with coarse sea salt and place the baking sheet on the top rack in the oven.

Roast at 425 degrees F for 20 minutes, then flip the potatoes over with a spatula.  Continue roasting for another 20 minutes, or until done.  The size of your cut potatoes will determine how long it takes for the potatoes to cook, so use this time as a guide.
