Prep Time: 5 minutes
10 oz. of mixed salad greens or spinach
2 pears (bosc, asian, or red)
6 oz of Gorgonzola cheese (or other blue cheese)
1 handful of walnut halves or pieces
1/4 cup of balsamic vinegar
½ cup of extra virgin olive oil
2 tablespoons of honey
1 tablespoon of fresh, chopped thyme (optional)
salt and pepper to taste
In the bottom of a large serving bowl pour in the ¼ cup of balsamic vinegar, 2 tablespoons of honey, 1 tablespoon of chopped fresh thyme, salt and pepper. Whisk the ingredients together. Then, while whisking continuously, slowly drizzle the olive into the bowl.
Cut the pears into desired size pieces (thin slices or bite size pieces) and add them to the dressing.
Add the walnut pieces.
With clean hands, toss the salad with the dressing and the fruit and nuts.
